Healthy January

One of my goals for the year was to eat healthier by eating less meat. So I started tracking every day which meals were meatless. I'm happy to say that out of the 31 days of the month I had at least 1 meatless everyday!! Also 15 days were actually 2 meals that were meatless. Of course my ultimate goal is to increase the number of days of which all 3 meals are meatless(only 1 this month) but I'm taking things slow. Two things that I believe assisted me is that I was participating in the 31 Day Green Smoothie challenge(completed 30 days out of 31) and also the fact that I wrote things down; and I will continue to do so. I also learned as with anything else, success is easier if you're prepared so I have to get better at having meatless meals ready that I can grab and go.

So overall I'm pretty darned pleased with my progress, not perfection Smile

    I'm very interested your your goal of reducing meat consumption. Do you think you would reduce meat consumption by using meat substitutes like tofu, seitan and vegan items that represent burgers, chicken wings, sausage etc? Are you using eggs, cheese, pasta, beans, mushrooms and fish as substitutes? Does the extra time needed to learn new methods of preparation impede your goal?

    We have nearly stopped eating red meat with a combination of having lost our taste for it, seeing the price escalate significantly while the quality gets poorer and it's processing issues.

    @Snafu, no real reason besides just wanting to get more veggies and fruits in my diet so more plant based. I stop eating pork and read meat a while back. Someone else suggested using meat substitutes as an option but I haven't tried anything except tofu. Basically now I'm trying to consume more fruits, veggies, beans, grains and nuts. I doubt if I ever completely give up meat but I will try to drastically reduce consumption. I'm a single parent with a special needs child so I must do all I can to remain healthy so I'm around for my daughter Smile
